Champoines Al Ajillo

I absolutely love all flavors from Spain and Champoines Al Ajillo is such a flavorful and easy side dish to make that pairs great with any grilled meat or fish. If you are not much of a mushroom fan, these are sure to change that with the flavors of the dry wine, and parsley.

Ingredients

1 lb white mushrooms, thinly sliced (code TRAIL gets you 10% off Nakano knives)

2 tablespoons dry white wine 
½ teaspoon black pepper
½ teaspoon sea salt
2 tablespoons fresh chopped parsley 


Directions

1. Heat a skillet over medium heat and add the olive oil, garlic and mushrooms. 

2. Sauté for a few minutes and add the remaining ingredients except the parsley. Continue to cook the mushrooms for 4-6 more minutes, stirring constantly. 

3. Serve on a plate and top with fresh parsley.
