Grain Free Marble Pound Cake

Ingredients

CAKE
¾ cup butter or coconut oil 
1¼ cup maple sugar 
1 teaspoon vanilla extract 
1 teaspoon orange extract
2 tablespoons orange juice 
1 tablespoon orange zest 
4 eggs 
2 cups Beths Blend Grain Free Flour (use code TRAILTOHEALTH for 10% off)
¼ teaspoon salt 
¼ cup cocoa powder
1 cup coconut milk 


Directions

1. Preheat your oven to 350 and grease a loaf pan with grass fed butter or coconut oil.

2. In a stand mixer, combine the coconut oil or butter with the maple sugar.  

3. Add in the vanilla extract, orange juice, orange zest,  orange extract and mix well.

4. Beat in the eggs, one at a time until fully combined.

5. Start to add the flour into the stand mixer and combine fully. Next add in the coconut milk.

6. Pour half of the batter into a separate bowl and set aside.

7. Add cocoa powder to the remaining batter in the stand mixer and combine.

8. Spoon batter into the loaf pan alternating plain and cocoa batter.

9. Once all the batter is in the pan, use a thin skewer stick or butter night to run through to create a marble pattern my making 4-5 swirl patterns.

10. Bake for 25-30 min until a cake tester comes out clean.

11. Once the cake is cooled, remove it from the pan and slice.

12. Enjoy with a glass of non dairy milk as a dessert, afternoon tea or breakfast bread.
