Roasted Garlic & Honey Glazed Baby Carrots

You either love or hate carrots, but there is rarely an in between. What if I told you I could turn you into a carrot lover with these honey glazed carrots? The honey turns them to candy and will get anyone to eat their veggies and the added thyme gives it a savory and herby flavor in every bite. You can even use baby carrots for this recipe making it one of the easiest and tastiest sides you will ever make.

Ingredients

1lb carrots, peeled (use code TRAILTOHEALTH for 50% off your 1st box of fresh produce)
3 tablespoons ghee or coconut oil, melted 
¼ cup honey
1 teaspoon sea salt
1 teaspoon cinnamon
1 tablespoon garlic powder
3 tablespoons fresh thyme, chopped


Directions

1. Preheat your oven to 425 F and line a baking sheet with parchment paper. 


2. In a small bowl, whisk together ghee or coconut oil, honey, sea salt, cinnamon and garlic powder. 


3. Lay the carrots out on the parchment lined baking sheet and using a pastry brush, brush the oil and honey mixture. Alternatively if you are using baby carrots, you can use a larger bowl and add them to the honey mixture in the bowl to coat before laying on the baking sheet.


4. Place in the oven and roast for 30 minutes or until golden brown. 


5. Remove from oven and place in a serving bowl. Top with fresh chopped thyme if desired.
