Roasted Parmesan Zucchini Bites

Zucchini is such a hearty and delicious recipe that holds up to a variety of flavors. Roasting it as a side with a sprinkle of parmesan cheese elevates this side as a perfect pairing to any baked fish or grilled meat.

Ingredients

3 large Zucchini
2 tablespoons melted coconut oil
2 tablespoons garlic powder
1 teaspoon sea salt
¼ cup grated parmesan

Directions

1. Preheat your oven to 375 F and line a baking sheet with parchment paper.

2. Slice the ends off the zucchini and cut into ½ inch slices at an angle.

3. In a small bowl, whisk together all of the ingredients except the parmesan.

4. Dip the sliced zucchini in the bowl on both sides and set on parchment lined sheet.

5. Sprinkle with parmesan cheese on top of each slice.

6. Bake for 7-10 min until cheese starts to melt.

7. Serve as a side to any meat or fish or as an afternoon snack.
